Peanut Butter Cookies
- 1/4 c. unsalted margarine
- 1/4 c. sugar
- 1/4 c. firmly packed brown sugar
- 1 egg
- 1/3 c. peanut butter (without added sugar or salt)
- 1/2 tsp. vanilla extract
- 1 c. unbleached or all-purpose flour
- 1/2 tsp. baking soda
- Cream margarine;
- gradually
- add
- sugar,
- beating until light and fluffy.
- Add
- egg
- and beat until mixture is smooth. Combine flour and soda;
- add
- to peanut butter mixture, mixing until
- well blended.
- Shape
- dough into 1 inch balls and then place 1 inch apart on ungreased baking sheets.
- Flatten into 2 inch
- rounds with
- a
- fork in a cross hatch pattern.
- Bake at 350u0b0
- fort
- to 10tinutes or until firm.transfer to wire racks to cool. Yields 2 1/2 dozen.
