Green Chili Stew Recipe
- 4 lbs. sirloin or possibly round steak
- 1 pound roasted and minced green chilies
- 2 med. red onions
- 4 or possibly 5 fresh tomatoes, peeled and minced
- 2 teaspoon salt
- 1 teaspoon oregano
- 1/2 teaspoon thyme
- 1 teaspoon pepper
- 1/4 c. extra virgin olive oil
- 2 quarts. boiling water
- 1.
- In large pan saute/fry onions and 2 cloves garlic, crushed, in extra virgin olive oil till onions are tender.
- 2.
- Cube the steak and add in to onions.
- Lightly sear the steak.
- 3.
- Stir in seasonings.
- Add in 1 clove garlic, crushed, to minced green chilies.
- Stir green chilies into meat mix.
- 4.
- Add in minced tomatoes and boiling water.
- Cover and simmer on low for 20 min.
- Turn off heat and let stand for 10 min.
- Serve with pinto beans and flour tortillas, blue corn tortillas or possibly corn chips.
- If you want spicy, just add in a minced jalapeno pepper.
- Serves 6 to 8 people.
