Uni with Rice Crackers Recipe Brian Redzikowski

  1. Bring rice and water to a boil.
  2. Stir until all water evaporates.
  3. Spread on a sil-pad and dry in an oven overnight.
  4. Cut dried rice sheets to 6cm by 4cm with a scissor.
  5. Fry in 350 degree fryer.
  6. Season.
  7. Set aside
  8. Using a scissor cut the uni shell around the mouth.
  9. Pour out liquid.
  10. Using a spoon remove the tongues.
  11. Quickly rinses with cold salty water.
  12. Reserve.
  13. Slice serrano peppers thin.
  14. Rinse in cold water for thirty minutes.
  15. Dry
  16. To Plate: Spoon uni tongue on the rice crackers.
  17. Add 1 slice of serrano.
  18. top with cilantro leaf and drizzle yuzu and soy on top.
