Basic Low-Fat Fluffy Whipped Potatoes

  1. Add potatoes to two quarts of water and bring to a rolling boil.
  2. Reduce heat and simmer uncovered, stirring occasionally, for 20-30 minutes, or until potatoes are fork-tender.
  3. Drain potatoes using a strainer.
  4. Return drained potatoes to emptied pot over very low heat.
  5. Add milk, yogurt, and seasonings.
  6. Using potato masher, mash potatoes until desired consistency is reached.
