Low-Fat Red Beans And Rice (High Fiber)
- 1 each red kidney beans red
- 1 cup water
- 1/2 cup pumpkin
- 1/4 cup tomato sauce
- 3 tablespoons chili sauce
- 18 teaspoon oregano
- 18 teaspoon garlic minced
- 2 cups rice cooked, hot
- In large nonstick saucepan over high heat, combine all ingredients except rice.
- Bring to boil, boil for 1 minute and reduce heat to low.
- Simmer 30 minutes, adding water if needed.
- Stir occasionally.
- Serve over rice.
- Makes 4 servings.
