Micro Meal Potato Scallop Recipe
- 1 (1 lb.) can stewed tomatoes
- 1 teaspoon grated orange peel
- 1 teaspoon salt
- 1 teaspoon basil
- 1/4 teaspoon pepper
- 4 to 5 med. potatoes (about 1 1/2 lbs.), sliced 1/8 inch thick
- 1 pound lean grnd beef, broken into pcs
- 1 1/2 c. grated sharp Cheddar cheese
- In shallow 2 qt microwave proof dish, mix tomatoes, orange peel, salt, basil and pepper.
- Add in potatoes, mix and spread in even layer.
- Cover loosely with plastic wrap.
- Microwave on high power for 8 min.
- Stir, cover and microwave on high power for 8 min.
