Apricot Ginger Conserve
- 3 cups apricots, dried
- 3/4 cup crystallized ginger (candied) sliced
- 1/2 cup orange juice
- 1/4 cup lemon juice
- 5 cups water cold
- 2 teaspoons orange zest grated
- 1 teaspoon lemon zest grated
- 2 1/4 cups sugar
- 1/2 cup nuts chopped
- Wash apricots.
- Add water, ginger, orange and lemon juice, grated rind, and sugar.
- Stir until well mixed.
- Simmer slowly, stirring frequently, until thick and clear.
- Add nuts and cook 5 minutes.
