Roasted Tomato Sauce
- 5 pounds Tomatoes, Chopped
- 1 cup Onion, Chopped
- 8 cloves Garlic, Chopped
- 1 cup Fresh Basil, Chopped
- 1 cup Other Varied Herbs (Parsley, Chives, Thyme--What Ever Is In Your Garden)
- 1/2 teaspoons Crushed Red Pepper
- 1 Tablespoon Salt
- 1 cup Olive Oil
- Preheat your oven to 400 degrees.
- Put the chopped tomatoes, onions, garlic, and herbs together in a bowl.
- Add the red pepper and salt and pour the olive oil over everything.
- Stir to mix.
- Pour the contents of the bowl into two 9 x 13 glass baking dishes.
- Put the dishes in the oven and roast the sauce for about an hour, until some of the liquid has evaporated and the tomatoes are roasted and sweet.
- Stir once or twice during the roasting process.
- Pour the finished sauce over your favorite pasta, or pour it into a freezer bag and freeze it for it up to a year.
