Southwest Chipotle Pork

  1. In a 3 1/2 Quart to 4 Quart Slow cooker.
  2. Spray with nonstick spray.
  3. Place Pork Tenderloin in slow cooker (Fat side down) and top with Onions, Peppers, Tomatoes, and Chilies.
  4. Cover and cook in slow cooker on HIGH for 4 hours.
  5. Or LOW for 8 hours.
  6. -NOTE- If cooking stove top use medium heat for 2 to 3 hours and make sure to add water to keep moist.
  7. With a slotted spoon, Remove the pork loin and pull apart using two forks.
  8. Once pulled, Return pork to slow cooker.
  9. Add Ketchup, Cumin and salt.
  10. Mix well.
  11. Let cook on low for 10 minutes to blend flavors.
  12. Meanwhile, Heat the tortillas.
  13. With a slotted spoon, place 1/3 cup of the meat mixture on each of the wraps.
  14. Top each with 1/2 cup of shredded lettuce.
  15. and wrap the tortilla like a burrito.
