Brazilian Black Beans With Rice & Tomato Salsa Recipe

  1. Boil beans for 2 min and then let stand for an hour.
  2. Add in salt, clove studded onion and garlic.
  3. Simmer 1 hour.
  4. Add in thyme and oregano and cook 1/2 hour.
  5. Saute/fry minced onion, pepper and garlic in oil.
  6. Add in beans with liquid and minced tomatoes.
  7. Cook till tomatoes are soft.
  8. Remove 1 c. mix and mash.
  9. Return to skillet and cook till sauce thickens slightly.
  10. (May be prepared ahead to this point.)
  11. Spoon rice onto hot platter.
  12. Top with bean mix and salsa.
  13. Garnish with orange slices.
  14. Serve with lowfat sour cream and corn bread.
  15. Serves 6.
