Spicy Lamb and Vegetables
- 2 cups hot cooked rice
- 1 lb ground lamb
- 1 onion, cut in wedges
- 14 teaspoon red pepper flakes
- 1 (14 1/2 ounce) can Italian stewed tomatoes
- 2 medium carrots, pared and sliced diagonally
- 14 cup peach chutney
- 12 cup green pepper, cut into strips
- In skillet, brown meat with onions and red pepper flakes.
- Season with salt and pepper.
- Add tomatoes, carrots and chutney.
- Cover and cook 15 minutes.
- Add green pepper and cook uncovered over medium-high heat 5 minutes, stirring occasionally.
- Serve over hot cooked rice.
