Apple And Cheddar Corn Muffins Ww Recipe
- 1 2/3 c. Flour all-purpose
- 1 1/2 ounce Cornmeal yellow uncooked
- 1 Tbsp. Baking pwdr double-acting
- 3/4 lb Apples cored, pared, finely minced
- 1/2 c. Whole Kernel Corn, Frzn Thawed
- 2 1/4 ounce Lowfat Cheddar Cheese shredded
- 1/3 c. Sugar granulated
- 1 dsh Cinnamon grnd
- 1 dsh Nutmeg grnd
- 6 Tbsp. Corn oil
- 3 x Large eggs lightly beaten
- Preheat oven to 400F.
- Line 12 2-1/2" muffin-pan c. with paper baking c.; set aside.
- In large mixing bowl combine flour, cornmeal and baking pwdr.
- Add in apples, corn, cheese, sugar, cinnamon, and nutmeg, stirring to combine.
- In small bowl beat together oil and Large eggs; stir into flour mix.
- Fill each baking c. with an equal amount of batter.
- Bake in middle of even for 15 min, till golden brown and toothpick comes out dry.
- Set pan on wire rack and let cold.
