Small Rigatoni With Tomato And Basil Sauce Recipe
- 1/4 c. minced onion
- 1 garlic clove, chopped
- 1/4 c. extra virgin olive oil
- 3 1/4 c. (2-14 ounce. cans) sliced stewed tomatoes with liquid, cut into sm. pcs
- 1 tbsp. dry basil
- 1 teaspoon salt
- 8 ounce. (3 c.) sm. rigatoni, uncooked
- Saute/fry onion and garlic in oil in medium skillet till onion is tender, but not brown.
- Add in tomatoes with liquid, basil and salt; bring to boil over medium heat.
- Reduce heat; simmer 20 min, stirring occasionally.
- Cook small rigatoni according to package directions; drain.
- Toss immediately with sauce.
- Garnish with fresh parsley, if you like.
- About 4 servings.
