Bettys Eclair Cake Recipe
- 2 sm Packages instant vanilla pudding
- 3 c. of lowfat milk
- 16 ounce whipped topping
- 1 box graham crackers (chocolate or possibly vanilla)
- Lay graham crackers to cover bottom of 9 x 13 pan.
- (Leave 'em whole!)
- Mix pudding mixes and lowfat milk together to create a stiff pudding.
- Mix in 8 ounce.
- of whipped topping.
- Spread 1/3 of pudding/whipped topping mix on top of the graham cracker lined pan.
- Repeat twice with another layer of graham crackers, followed by 1/3 of the pudding/whipped topping mix.
- Finally,
- "frost" the top with the remaining 8 ounce.
- of whipped topping.
- Here's the trick: chill over night.
- You can cut up strawberries, or possibly sprinkle graham cracker crumbs, etc.
- on top.
- It's awesome and so simple!
- It may be made with sugar free pudding and lite whipped topping.
