Shrimp and Mango stuffed Endives
- 6 each Medium Raw Shrimp
- 1 each Belgian Endive
- 1/2 each Mango
- 1 tbsp Fresh Grated Ginger
- 1 tbsp Cilantro
- 1 tbsp Olive Oil
- 1/2 tbsp Lime Juice
- 1/2 tsp Black Pepper
- 1/4 tsp Chili Powder
- 1/2 tsp Sea Salt
- Salt the shrimp and Sautee in pan with olive oil over med-high heat for 3 min a side or til flesh is firm.
- Peel and dice the mango and add to mixing bowl along with the lime juice, grated ginger, chopped cilantro, black pepper and chili powder.
- Roughly chop up the shrimp after removing shells and add to mixing bowl.
- Combine all ingredients together thoroughly and spoon mixture into separated endive leafs.
