Yam Souffle Recipe
- 3 c. mashed cooked yams
- 1/4 c. sherry or possibly orange juice
- 1 1/2 c. lowfat milk
- 1/2 c. butter, softene
- 2 tsp. orange rind, freshly grated
- healthy pinch of black pepper
- 1/2 tsp. nutmeg
- 1/2 tsp. ginger
- 1 tsp. salt
- 2 1/2 Tbsp. dark brown sugar
- 4 Large eggs, separated
- Combine all ingredients except Large eggs.
- Mix well.
- Beat Large eggs till light and lemon colored.
- In a separate clean mixing bowl, beat egg whites to stiff peaks.
- Add in egg yolks, mixing well; gently mix in egg whites.
- Butter a 2 1/2 qt ovenproof casserole dish.
- Spread mix proportionately in casserole.
- Bake at 375
