Yam Souffle Recipe

  1. Combine all ingredients except Large eggs.
  2. Mix well.
  3. Beat Large eggs till light and lemon colored.
  4. In a separate clean mixing bowl, beat egg whites to stiff peaks.
  5. Add in egg yolks, mixing well; gently mix in egg whites.
  6. Butter a 2 1/2 qt ovenproof casserole dish.
  7. Spread mix proportionately in casserole.
  8. Bake at 375

mashed cooked yams, sherry, milk, butter, orange rind, black pepper, nutmeg, ginger, salt, brown sugar, eggs
