Guilt Free Chocolate Pudding Cake

  1. Preheat oven to 350.
  2. Spray a 9 inch square pan with nonstick spray.
  3. Combine the flour, granulated sugar 1/3 cup of cocoa, baking powder, instant coffee powder, baking soda and salt in a large bowl.
  4. Make a well in the center and pour in milk, melted butter and vanilla.
  5. Stir just until blended.
  6. Pour the batter evenly into prepared pan.
  7. Mix brown sugar and the 1/4 cup cocoa in a small bowl.
  8. Sprinkle evenly over the batter.
  9. Gently pour the boiling water over the top in a zig zag pattern.
  10. DO NOT STIR.
  11. Bake until the top of the pudding is set.
  12. About 35 minutes.
  13. Cool on a rack at least 30 minutes before serving.
  14. Cut into squares and serve warm or at room temperature.
