Coconut Sorbet

  1. In a non stick saucepan heat coconut milk and sugar together.
  2. Occassionally stir, and keep a watch on it so the coconut milk and it's oils do not separate.
  3. Simmer for 3 minutes, or until all the sugar has been dissolved.
  4. Remove from heat.
  5. Add the cream and refrigerate for at least 2 hours.
