Cara's Green Chile Enchilada Bake

  1. Add oil to large skillet on medium high.
  2. Add onions & garlic
  3. After about 5min, add ground beef & seasonings.
  4. Cook til browned & drain grease
  5. Add sauce, salsa & 3/4 of chiles to hamburger meat.
  6. I would use all the chiles but it would be too spicy for kids.
  7. Use as much as you like
  8. Lower heat to med/med low & let cook about 15 min.
  9. During that time, heat beans, shred cheese & tear tortillas in 4's
  10. In a 9x13 baking pan, spoon a small amount of meat mixture in pan to lightly cover bottom.
  11. The helps prevent tortillas from sticking
  12. Using 10 tortillas, layer the pieces, overlapping alot.
  13. This helps absorb juices
  14. Spoon 1/2 the meat mixture on tortillas & spread evenly.
  15. Dallop 1/2 the beans over the meat.
  16. Using 1/2 the cheese, sprinkle on top
  17. Repeat layers once more, topping with cheese.
  18. Make sure all tortillas are covered with meat or cheese to avoid toughness.
  19. Cover with foil.
  20. Bake @350 for 15/20min.
  21. Last 5min remove foil.
  22. Let sit 5-10 min before serving.
  23. Enjoy!
