Brazil Nut Christmas Fruit Cake Recipe
- 1 1/2 c. whole Brazil nuts
- 1 1/2 c. walnuts
- 1 pkt pitted dates (8-oz)
- 1/2 c. raisins
- 2/3 c. candied orange peel
- 1/2 c. candied green cherries
- 1/2 c. candied red cherries
- 3/4 c. flour
- 1/2 tsp baking pwdr
- 3/4 c. sugar
- 1/2 tsp salt
- 3 x Large eggs
- 1 tsp vanilla extract
- 1 ounce brandy optional
- Combine nuts, dates, raisins, orange peel and cherries.
- Sift flour, baking pwdr, sugar and salt over fruits and nuts, making sure all are well-coated.
- Beat the Large eggs well with the vanilla extract and add in to flour-fruit mix.
- Grease two 9x5-inch loaf pans, line with brown paper, then grease the paper.
- Pour in the batter and bake at 300 degrees for 1 and 1/2 to 2 hrs.
- Cold, then wrap in Saran wrap.
- After several days, brush loaves with 1 oz brandy if you like.
- Best to make these about 3 weeks before you want to serve them.
