Beef Olives Recipe
- 800 gm beef, topside
- 1/2 c. onions, medium
- 440 gm whole peeled tomatoes
- 1 c. red wine
- 1/2 c. brandy
- 1 Tbsp. flour, plain
- 2 Tbsp. vegetable oil
- 300 gm sausage mince
- 1 Tbsp. parsley, minced
- 2 clv garlic, crushed salt, pepper
- Combine stuffing ingredients and mix well.
- Cut beef into 4 equal sized steaks.
- Lay out the beef, flatten slightly with a meat hammer, season and divide the stuffing proportionately between the beef.
- Roll up to completely enclose the stuffing and tie or possibly secure with toothpicks.
- Heat the oil in a pan and brown the beef in the oil.
- Transfer to casserole dish.
- Finely slice onions.
- Add in onions to pan and cook 2 min till soft, stir in the flour and cook a further minute on low.
- Add in the tomatoes + juice, red wine and brandy and stir till smooth and sauce boils.
- Pour over the beef, cover, and cook at 190C/380F for about 1 1/2 hrs till beef is tender.
- Sprinkle with minced parsley just before serving.
- Winter casserole.
