Beef Olives Recipe

  1. Combine stuffing ingredients and mix well.
  2. Cut beef into 4 equal sized steaks.
  3. Lay out the beef, flatten slightly with a meat hammer, season and divide the stuffing proportionately between the beef.
  4. Roll up to completely enclose the stuffing and tie or possibly secure with toothpicks.
  5. Heat the oil in a pan and brown the beef in the oil.
  6. Transfer to casserole dish.
  7. Finely slice onions.
  8. Add in onions to pan and cook 2 min till soft, stir in the flour and cook a further minute on low.
  9. Add in the tomatoes + juice, red wine and brandy and stir till smooth and sauce boils.
  10. Pour over the beef, cover, and cook at 190C/380F for about 1 1/2 hrs till beef is tender.
  11. Sprinkle with minced parsley just before serving.
  12. Winter casserole.
