Black Bean and Corn Salsa
- 2 cups frozen white corn kernels
- 2 cups canned black beans, rinsed and drained
- 8 -10 cherry tomatoes, chopped
- 12 teaspoon lime peel, finely shredded
- 1 cup blue cheese, crumbled
- 1 scoop tortilla chips
- Quickly thaw corn by running under water until just thawed.
- In a small bowl combine all ingredients, mix well.
- Serve with tortilla chips.
