Baked Sweet Potatoes With Amaretto Recipe
- 5 lb sweet potatoes
- 1/2 c. butter
- 1/2 c. brown sugar packed
- 1/4 c. amaretto
- 1/4 c. orange marmalade
- 1/2 tsp salt
- 20 x gingersnap cookies crushed
- Preheat oven to 450F.
- Lightly grease sweet potatoes and bake till soft, about 40 min.
- Let cold, then peel and mash well with butter, brown sugar, amaretto, marmalade and salt.
- Grease a shallow 3-qt baking dish, spread potatoes proportionately in dish, then crumble the cookies over them.

- NOTES :Since we are going out for Thanksgiving dinner I have been doing some cooking which will capture some of my favorite flavors which I might miss at the restaurant.

- I scaled the recipe down to 3 servings and it scaled wonderfully.
- Along with which we had the Maple-Mustard Pork Roast posted to Eat-L by Claudia Knowles.
- I used pork tenderloin to cut down on the fat.
- I think I might marinate this in the sauce next time to get more of the delicious flavor.
- We also had creamed onions.
