Asiago Bucatini with Shrimp
- 16 md. fresh
- defrosted shrimp
- salt and pepper to taste
- 1 package, dried bucatini pasta
- 1/3 cup (75) freshly squeezed lemon juice
- 1/4 cup (50) olive oil
- 1/2 cup (175) Tre Stelle Asiago Shredded Cheese
- 1 cup (250) fresh basil leaves
- 1 tbsp. (15) capers, rinsed and patted dry
- In a small bowl whisk together lemon juice, olive oil, salt and pepper; add Asiago cheese and basil leaves; set aside.
- Season shrimp with salt and pepper.
- In a medium non-stick skillet quickly stir-fry shrimp until pink.
- Remove from heat.
- In a large pot of boiling salted water add pasta and cook until al dente.
- Drain and add lemon/cheese sauce, shrimp, capers and basil, stir and serve.
- Makes 4 servings
