Italian Roast Pork with Rosemary

  1. Heat oven to 350F.
  2. Finely chop rosemary and garlic together.
  3. Make 8 to 10 deep cuts in the roast, about 2 inches apart.
  4. Insert small amounts of garlic and rosemary mix in the cuts.
  5. Sprinkle with salt and pepper.
  6. Melt butter in a shallow roasting pan.
  7. Sprinkle onion over the butter.
  8. Put pork in the pan and drizzle with oil.
  9. Roast uncovered 50 to 60 minutes until the internal temperature is 155 degrees.
  10. Remove from the oven and tent with foil.
  11. Let stand for 15 to 20 minutes until the internal temperature is 160 degrees.
