Rf2's Chocolate Chocolate Chip Oatmeal Cookies
- 2 cups sprouted wheat, made into flour
- 12 cup cocoa powder, organic
- 1 cup rolled oats, organic (regular, not quick)
- 1 teaspoon sea salt
- 1 14 cups chocolate chips, organic
- 1 cup nuts, organic (chopped)
- 1 tablespoon vanilla extract, organic
- 2 tablespoons brewed coffee, organic
- 12 tablespoon coffee beans, organic (fine-ground)
- 34 cup organic virgin coconut oil, softened or 34 cup butter
- 1 cup evaporated cane juice
- 1 teaspoon liquid stevia
- 2 large eggs
- Preheat oven to 350F degrees.
- Grease cookie sheet(s) with additional coconut oil or use well seasoned stoneware pans (I do) and set aside.
- Mix the flour, cocoa, oats, salt, chocolate chips, and nuts in a large bowl.
- In another bowl or in a Vita-Mix/blender, mix the other ingredients.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- The dough will be VERY stiff.
- Roll dough into golf-ball sized balls, place on prepared cookie sheets and flatten to about 1/2" thickness.
- Bake in preheated oven for 18-20 minutes.
- Remove from sheets to wire rack to cool.
- (Prep time does not include preparing the raw ingredients).
