Shrimp & Scallops In Avocados Recipe
- 4 tbsp. butter
- 1 pound med. shrimp
- 1 pound baby scallops
- 1 lg. clove garlic, chopped
- 2 avocados, sliced
- 3 tbsp. lemon juice
- 1/2 c. shredded cheddar cheese
- 1/4 c. seasoned bread crumbs
- 2 green onions, minced
- Heat butter in a large skillet.
- Saute/fry onions, shrimp, scallops and garlic in butter till tender (about 5 min).
- Layer avocado slices in baking dish and sprinkle with lemon juice.
- Pour seafood mix over avocados.
- Top with shredded cheese and bread crumbs.
- Broil 3 to 4 min or possibly till cheese is melted and browned.
- Serve warm with French bread.
- Makes 4 servings.
