Maque Choux

  1. Saute bacon in large saute pan until crisp.
  2. Pour off all but one Tbsp of drippings.
  3. Add bell pepper and onion and cook until soft.
  4. Deglaze with sherry until nearly evaporated.
  5. Stir in corn, cream, and Tabasco and simmer until thickened.
  6. Season with salt and pepper and then stir in the scallions.
