Spinach Burgers
- 500 grams Spinach, tough stalks removed
- 2 Eggs, beaten
- 1 pinch freshly grated Nutmeg
- 3 clove of Garlic, crushed
- 100 grams fresh white Breadcrumbs
- 50 grams Parmessan, finely grated (or vegetarian alternative)
- Blanch the spinach in a saucepan of boiling salted water for about 2 mins.
- Remove, drain and allow to cool slightly.
- Squeeze out as much water as you can and chop all the leaves finely.
- Put the spinach in a bowl and stir in the egg, nutmeg, garlic, breadcrumbs and cheese, as well as some salt and pepper for seasoning.
- Mix well until you reach a nice binding consistency.
- If the mixture is too wet, add some more breadcrumbs.
- Shape into burgers, place on a sheet of greaseproof paper, another sheet on top of the burgers.
- Place in fridge to chill (overnight if possible), or freeze.
