Spinach Burgers

  1. Blanch the spinach in a saucepan of boiling salted water for about 2 mins.
  2. Remove, drain and allow to cool slightly.
  3. Squeeze out as much water as you can and chop all the leaves finely.
  4. Put the spinach in a bowl and stir in the egg, nutmeg, garlic, breadcrumbs and cheese, as well as some salt and pepper for seasoning.
  5. Mix well until you reach a nice binding consistency.
  6. If the mixture is too wet, add some more breadcrumbs.
  7. Shape into burgers, place on a sheet of greaseproof paper, another sheet on top of the burgers.
  8. Place in fridge to chill (overnight if possible), or freeze.
