Cool Pasta Salad
- 1 (1 ounce) package hidden valley ranch dressing mix
- 1 cup mayonnaise
- 1 cup milk
- 1 (16 ounce) package pasta
- 12 cup carrot
- 8 ounces cheddar cheese cubes (1 package)
- 4 ounces pepperoni, cut into quarters (half a package)
- 1 (2 1/4 ounce) can black olives, drained
- 1 cup assorted fresh vegetable, diced
- Mix ranch dressing mix, mayo and milk as directed on package.
- Peel and slice the carrots into matchsticks.
- Cook the pasta as directed on package, adding the carrots to the boiling pasta for the last 3-4 minutes of cooking time.
- Drain the pasta and carrots, rinse until cool.
- In a large bowl, combine the pasta/carrots, olives, cheese cubes, pepperoni, and assorted vegetables.
- Add in the ranch dressing as desired (I used about half of it).
- Let chill for at least an hour.
- Add more dressing as needed.
- You can substitute other kinds of cheese for the cheddar.
- Instead of pepperoni, try ham or chicken.
