AMIEs KAMOTE QUE (sweet potato fritters)

  1. Heat the oil in a deep frying pan over medium heat.
  2. Add the brown sugar when the oil is moderately hot.
  3. Add the potato in batches once the brown sugar floats.
  4. Fry the potato for about 5-8 minutes.
  5. Turn it from time to time to spread the caramelized sugar coating or until the potato are fully coated with caramelized sugar.
  6. Remove the potato and let it cool.
  7. W e can use barbeque sticks for a nice and better presentation.
