Berdie's Mexican Rice
- 2 tablespoons olive oil
- 2 cups long grain white rice, uncooked
- 1 cup salsa
- 1 teaspoon minced garlic
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 4 cups water
- salt and pepper
- In a large saucepan, heat oil over medium heat.
- Add the rice, cook and stir until lightly golden.
- Stir in all remaining ingredients; reduce heat to low.
- Cover and cook for 20 mins or until rice is fully cooked and all water is evaporated.
