Berdie's Mexican Rice

  1. In a large saucepan, heat oil over medium heat.
  2. Add the rice, cook and stir until lightly golden.
  3. Stir in all remaining ingredients; reduce heat to low.
  4. Cover and cook for 20 mins or until rice is fully cooked and all water is evaporated.
