Salted Caramel Chex Mix

  1. Mix all of the cereal, pretzels, popcorn, nuts, and craisins in a LARGE bowl.
  2. Next, melt the butter in a heavy-bottomed pot.
  3. Add sugar, syrup and salt.
  4. Bring to a boil, stirring constantly.
  5. Boil without stirring for 5 minutes on medium heat.
  6. Remove from heat and stir in vanilla, then add the baking soda.
  7. The mixture will foam up, so be careful (not for kiddies).
  8. Butter a few cookie sheets.
  9. Pour caramel (carefully!)
  10. over the popcorn/cereal mixture and toss to coat evenly.
  11. Place in the oven and bake at 250 degrees for 1 hour, mixing every 15 minutes.
  12. Remove from the oven and sprinkle sea salt on top while it is still warm, then let it cool so you dont burn your fingers eating it off the pan.
  13. Hands off for a few minutes!
