Pineapple Shortcakes
- 1 tube of biscuits
- 1 egg
- 2 tbsp. sugar
- 4 c. chopped fresh pineapple
- 1/4 c. sugar
- 1/2 c. heavy cream
- Place biscuits on cookie sheet.
- Brush with beaten egg; sprinkle with 2 tablespoons sugar.
- Bake 13 to 15 minutes or until golden.
- In 10-inch skillet, cook pineapple and 1/4 cup sugar on medium-high 5 minutes or until tender, stirring often.
- Beat heavy cream until stiff peaks form.
- Divide pineapple and cream among split biscuits.
