Bacon, Apple & Cheese Muffins
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 Land O Lakes Egg, lightly beaten
- 2 tablespoons Land O Lakes Butter, melted
- 1 medium (1 cup) Gala apple, peeled, chopped
- 6 slices (1/2 cup) bacon, crisply cooked, chopped
- 6 (3/4-ounce) slices Land O Lakes Deli American, cut into quarters
- Heat oven to 375F.
- Grease 12-cup muffin pan or line with paper baking cups; set aside.
- Combine flour, sugar, baking powder and salt in bowl.
- Stir in milk, egg and butter just until moistened.
- Gently stir in apple and bacon.
- (Batter will be thick.)
- Divide batter evenly among muffin cups.
- Bake 15-18 minutes or until light golden brown and toothpick inserted in center comes out clean.
- Remove from oven; top each muffin with 2 quarters cheese.
- Continue baking 1-2 minutes or until cheese is melted.
- Cool 5 minutes in pan; remove from pan to cooling rack.
