Bacon, Apple & Cheese Muffins

  1. Heat oven to 375F.
  2. Grease 12-cup muffin pan or line with paper baking cups; set aside.
  3. Combine flour, sugar, baking powder and salt in bowl.
  4. Stir in milk, egg and butter just until moistened.
  5. Gently stir in apple and bacon.
  6. (Batter will be thick.)
  7. Divide batter evenly among muffin cups.
  8. Bake 15-18 minutes or until light golden brown and toothpick inserted in center comes out clean.
  9. Remove from oven; top each muffin with 2 quarters cheese.
  10. Continue baking 1-2 minutes or until cheese is melted.
  11. Cool 5 minutes in pan; remove from pan to cooling rack.
