Grilled Ham and Cheese Sandwich

  1. Spread spicy mustard on one side of each slice of bread.
  2. I use jalapeno mustard.
  3. Distribute cheese evenly among the 8 pieces of bread.
  4. Pan fry ham until slightly caramelized.
  5. Remove and set to one side.
  6. Pan fry onions in half the butter until caramelized.
  7. Remove and set to one side.
  8. Melt remaining butter in pan or griddle.
  9. Place 4 slices of bread (chees side up) on the pan or griddle and move around to sop up the butter.
  10. Distribute the ham slices among the four slices in the pan or griddle.
  11. Top each with caramelized onions.
  12. Top with remaining 4 slices (cheese side down).
  13. Put a thin pat of butter on top of each sandwich, then flip when golden brown.
  14. Brown remaining side, moving around in the pan or griddle to ensure even coating of butter.
  15. Remove from heat and cut in half diagonally and serve with chips and a big dill pickle slice.
