Orange Dijon Acorn Squash

  1. Preheat oven to 400F.
  2. Pour cider into 13" by 9" baking dish; add squash, rounded sides down, to dish.
  3. Season with 1/4 teaspoon salt and 1/8 teaspoon pepper.
  4. Cover with foil; bake 30 minutes or until just tender.
  5. Meanwhile, in medium bowl, mix mustard, butter, cinnamon, marmalade and 1/4 teaspoon salt until smooth.
  6. Reset oven to 425F.
  7. Uncover squash; brush on mustard mixture.
  8. Roast 30 minutes or until browned.
  9. Transfer to platter; pour pan juices over all.
