Quick Shrimp Curry

  1. Melt the butter in a saucepan.
  2. Remove from heat, stir in flour and seasonings.
  3. Add a little milk and stir to blend.
  4. Gradually stir in the remaining milk.
  5. Cook and stir until mixture boils and thickens.
  6. Add shrimp (or clams or chicken) and pineapple tid-bits.
  7. Heat through.
  8. Serve over hot cooked rice.
  9. If desired, serve with condiments such as chopped peanuts, coconut or chutney.
