Tofu Scramble
- 16 ounces extra firm tofu, drained and pressed
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 small chopped onion
- 12 chopped green pepper
- 12 chopped red pepper
- 2 teaspoons ground cumin
- 1 teaspoon dried thyme
- 1 teaspoon ground paprika
- 12 teaspoon ground turmeric
- 1 teaspoon salt
- 1 dash black pepper
- Heat oil in a large skillet over medium-high heat, and saute the garlic and onions until softened.
- Then add the peppers and cook for 3 minutes.
- After that, add the cumin, thyme, paprika, turmeric and salt.
- mix well.
- add 1/4 cup water to deglaze the pan, scraping the bottom to get all the spices.
- Crumble the tofu and add to the mixture in the skillet.
- Mix well and cook for about 10 minutes, stirring occasionally.
- Serve immediately.
