Fried Okra Salad
- 1 12 cups self rising flour
- 1 teaspoon salt
- 1 lb fried okra
- 1 12 cups buttermilk
- oil
- 1 head bibb lettuce
- 1 cup chopped tomato
- 1 medium sweet onion, sliced
- 1 medium bell pepper, chopped
- lemon, dressing
- 1 slice crumbled bacon
- Combine corn meal and salt.
- Dip okra in buttermilk and dredge in cornmeal.
- Heat 2 inches of oil in a Dutch oven heated to 375 degrees.
- Fry okra in batches until golden brown.
- Drain on paper towels.
- Arrange lettuce leaves, tomato slices, onion,and bell pepper on a plater.
- Add lemon dressing, stirring to coat.
- Top with bacon and okra.
