Italian Bacon and Tomato Risotto

  1. Cook bacon and onions in large skillet on medium heat until bacon is crisp, stirring occasionally; drain.
  2. Add rice, tomatoes, broth, milk and parsley; mix well.
  3. Bring to boil.
  4. Reduce heat to low; simmer 5 min.
  5. Stir in 1/4 cup of the Parmesan cheese.
  6. Remove from heat; cover.
  7. Let stand 5 min.
  8. before serving.
  9. Sprinkle with the remaining cheese.
