Potato Lentil Jumble
- 1 big carrot, chopped
- 3 small potatoes, cubed
- 1 (19 fluid ounce) can lentils
- 2 big garlic cloves, diced
- 1 12 tablespoons olive oil
- 1 12 teaspoons unsweetened coconut, shredded
- salt and pepper
- 2 tablespoons fresh parsley, chopped
- Chop carrot and potatoes and cook in boiling water.
- Drain lentils and prepare garlic.
- Once cooked, remove carrot and potatos from boiling water and combine with lentils, oil and garlic in a frying pan.
- Add salt and pepper to taste.
- Cook on medium until heated through, stirring regularly.
- Sprinkle coconut and parsley near end of cooking time and stir to mix the flavours.
- Serve and enjoy!
