Chorizo Hash
- 1/2 yellow onion, chopped
- 1 clove garlic, finely chopped
- 1 cup chopped cooked potatoes, about one small potato
- 1/4 cup chorizo, cubed small
- 1 tbsp fresh rosemary, chopped
- 1/8 tsp smoked paprika
- 2 eggs, whipped up lightly with a fork
- Heat a non stick pan on a medium low heat.
- Add the chorizo, and sizzle it until the orange oils of the chorizo starts coating the pan
- Add the onion and cook for two minutes, then add the garlic and saute for more minutes
- Add the potato, rosemary and smoked paprika.
- Season with salt and black pepper.
- When everything is heated through, move everything around the edges of the pan, leaving a circle in the middle.
- Add the egg, turn up the heat a little and start moving the egg around with a wooden spoon.
- Don't worry if bits of the chirizo mixture get mixed in with the egg, that's fine.
- Spoon onto a plate and serve hot!
