Gluten-Free Chocolate Chip Zucchini Brownies
- 1 cup almond meal 110g, you can just out 1 cup of almonds in a food processor and grind them down very fine if you don't have almond meal
- 175 grams brown sugar, light 1 cup
- 120 grams brown rice flour 3/4 cup, or you can use sorghum flour
- 1/2 cup cocoa powder unsweetened
- 1 teaspoon xanthan gum
- 1/2 teaspoon baking powder
- 3/4 teaspoon sea salt fine, (regular salt is fine, too)
- 2 large eggs beaten
- 1/4 cup vegetable oil (coconut oil is nice to use, too, for more flavor)
- 1 teaspoon vanilla extract
- 1 cup zucchini shredded, patted dry and packed
- 3/4 cup chocolate chips (milk or dark, whatever your fancy may be)
- Preheat oven to 350?F
- 1).
- In a large bowl, mix almond meal, brown sugar, brown rice flour, cocoa powder, xanthun gum, baking powder, and salt.

- Beat in the eggs, oil, and vanilla.
- Add the shredded zucchini, and chocolate chips and mix well.
- 3).
- Pour mixture into a baking pan that is either non-stick, greased, or even lined with parchment paper.
- 4).
- Bake for about 25 minutes, let cool, and then eat up!
