Grilled Pizza
- 1 lb. pizza dough, at room temperature
- 3 tbsp. olive oil
- 3/4 c. marinara sauce
- 6 oz. mozzarella
- 3 tbsp. grated Parmesan
- 1 tsp. dried oregano
- Heat grill to medium.
- Stretch each quarter of dough until it's about a 7- to 8-in.
- round or oblong shape and about 1/8-in.
- thick.
- Brush both sides with oil and place on 2 baking sheets.
- Place the pizza dough on the grill and cook, covered, until the tops begin to bubble and bottoms become crisp, about 2 minutes.
- Shut off the burners on one side of the grill.
- Using tongs, turn the crusts and transfer to the unlit side of the grill.
- Working carefully, spread the sauce over each pizza then top with the mozzarella, Parmesan and oregano.
- Close cover and grill until the bottoms are browned and the cheese is melted, 7 to 10 minutes, rotating pizzas after 3 minutes.
