Broccoli Rabe
- 1 lb broccoli rabe
- 14 cup extra virgin olive oil
- 3 garlic cloves, finely chopped
- 1 pinch salt
- 12 lemon
- 1 pinch salt
- Wash broccoli rabe and remove thick stems.
- Add olive oil to 2 quart pot and heat.
- Add garlic and let cook 1 minute.
- Add broccoli rabe and salt and cover.
- Cook 10 minutes, stiring often.
- Serve with 1/4 lemon, the juice offsets the bitter taste of the greens.
