Country Breakfast Pie

  1. Place bacon in a 9-inch pie plate.
  2. Cover with paper towels. Microwave on High, 3 to 4 minutes or until crisp.
  3. Remove bacon. Reserve drippings in pie plate.
  4. Crumble bacon and set aside. Spread potatoes in pie plate.
  5. Microwave uncovered at High, 6 to 7 minutes.
  6. Combine eggs, milk, salt and pepper.
  7. Pour over potato mixture.
  8. Cover with heavy-duty plastic wrap.
  9. Microwave at High, 6 to 7 minutes, giving dish a quarter turn after 3 minutes. Sprinkle cheese and bacon.
  10. Cover and microwave at High, 1 to 2 minutes.
  11. Let stand 5 minutes, then cut into wedges.
  12. Makes 6 servings.
