Breakfast Burritos With Tomato-Basil Topping

  1. Mix tomato and basil in small bowl; set aside.
  2. Cook and stir potato and onion in margarine or butter in nonstick skillet over medium heat until golden brown and tender.
  3. Add egg substitute and pepper; cook until done, stirring occasionally.
  4. Remove from heat.
  5. Divide egg mixture evenly between tortillas; top with cheese.
  6. Fold up one end of each tortilla over filling, then fold in sides like an envelope.
  7. Serve immediately topped with tomato mixture.
