BLT Rice Salad

  1. Cook and stir bacon in large skillet on medium heat until crisp.
  2. Remove bacon from skillet with slotted spoon; drain on paper towels.
  3. Discard all but 2 Tbsp.
  4. drippings from skillet.
  5. Add onions to reserved drippings in skillet; cook and stir 3 to 5 min.
  6. or until crisp-tender.
  7. Stir in water; bring to boil.
  8. Add rice; stir.
  9. Cover.
  10. Remove from heat; let stand 5 min.
  11. Fluff with fork.
  12. Cool to room temperature.
  13. Spoon rice mixture into large bowl.
  14. Add lettuce, tomatoes, mayo and bacon; mix lightly.
