Pork & noodle broth with shrimp

  1. Boil salted water then cook noodles according to directions.
  2. Then drain and refresh in cold water.
  3. Heat wok and add both oils.
  4. Once hot, add shallots and stir fry for 3 minutes.
  5. Once browned remove from wok and set aside.
  6. Add ginger, garlic, sugar, and stock and bring to a simmer .
  7. Add lime leaves, fish sauce and lime juice.
  8. Add the pork, then lower the heat, and simmer for 15 more minutes.
  9. Add the shrimp and the noodles and simmer for another 3 minutes or until the shrimp are cooked through.
  10. Serve using the cilantro and scallions as garnish.
